Monte Albán Guacamole

This is how the guacamole at Monte Albán might have tasted. For historical fidelity, we have omitted the garlic and citrus juice because these ingredients were introduced by the Spanish. Fortunately, the tartness of the Tomatillo Purée makes up for the lack of lemon juice. Spread on the Shrimp-and-Guacamole Tostadas, or serve as a dip with baked tortilla chips.

This recipe goes with Shrimp-and-Guacamole Tostadas

Yield

3 1/3 cups (serving size: 1/3 cup)

Ingredients

  • 1 cup Tomatillo Purée
  • 1 teaspoon minced seeded serrano chile
  • 1/2 teaspoon salt
  • 6 peeled ripe avocados, seeded (2 pounds)

Preparation

Combine Tomatillo Purée, serrano chile, salt, and avocados in a bowl, and mash the mixture to desired consistency. Cover and chill.

Tomatillos, or Mexican green tomatoes, are small and green, with a thin, papery husk that should be removed before cooking.

This recipe goes with Squash-and-Mushroom Tostadas,Black Bean-and-Chicken Tostadas, Monte Albán Guacamole

Yield

2 1/2 cups (serving size: 1/2 cup)

Ingredients

  • 1 1/4 pounds tomatillos (12 large)
  • 8 cups water
  • 3 tablespoons chopped fresh cilantro
  • 1/4 teaspoon salt

Preparation

Discard the husks and stems from the tomatillos. Bring water to a boil in a Dutch oven. Add tomatillos; cover and remove from heat. Let stand 5 minutes or until tender; drain. Place tomatillos in a blender; process until smooth. Stir in cilantro and salt. Cover and chill.

Note: Substitute 4 (11-ounce) cans tomatillos if you can't find them fresh. drain the canned tomatillos,and purée with cilantro. Omit the salt; canned tomatillos contain added sodium.

Two apartment buildings separated by this driveway. The buildings were built in 1927! Amazing tuck under garages from an era when cars were rare... the buildings are two stories on top of these garages, said garages (what does that mean "said"... I digress) are currently used for storage.

Wow

This was spotted on Grand Avenue in St. Paul. You may have to be from North Dakota (who isn't) in order to "really"understand this.

Today on the Bus July 8, 2009

I am riding a different bus at night. The driver is wonderful. He calls out the names of the streets, businesses, and the addresses ( 400 block of ___ avenue). He also offers a running commentary and review of restaurants.
It is one of those imagined big city experiences. Ahhh

Today's Observation-Missing from our diet?






I believe these are the key elements of a balanced diet (now I realize you can use lard in the pecan pie [at least the crust] so that you don't have have to eat it "raw' however, it makes an excellent substitution for butter, etc. ... does anyone know how you indicate a digression within a digression?... Ah I digress). Eat these in equal amounts... now don't be afraid to combine these, for example, ice cream on the pie wash it down with egg nog... The vanilla wafers with the ice cream-optional.
